Aluminium sulfate (Al2(SO4)3), commonly called alum, is produced as white crystals which are non-combustible and soluble in water. This .dry. hydrate (Al2(SO4)3.14H2O) is 17% Al2O3 and is also sold as a 47% w/w aluminium sulfate solution which is 8% Al2O3. It is also sold in solid form as kibbled, ground or dust.

Alum are represented by the general formula R1/2 SO4, R2"(SO4)3.24.H2O. Where R and R"are respectively monovalent and trivalent radicals. They are usually the double salts of ammonium, potassium or sodium sulphate with aluminium. Chromium or iron sulphate and are readily preparedy by concentrating and cooling a solution containing molecular proportions of the Component Sulphate.

Ferric and Non Ferric Alum is marketed in various grades. The cheapest grade called "alum cake". Potash alum also known as alum alumen.

Ferric alumin is aluminium sulphate containing iron obtained from the bauxite ore. Potash alum is prepared from its naturally occurring minerals such as alunite and Ratinite, but in India these do not occur in appreciable quantities.  Alum was formerly prepared from alum shales by roasting them in year and leaching it out with water. Alum is now produced in India by crystallizing   together equivalent produced in India by Crystallizing together equivalent proportion of potassium sulphate and aluminium sulphate. The solution is concentrated and the crystals are separated out are melted to yield lump alum or recrystalized to obtain large crystals.

Controlled atmosphere storage is a system for holding produce in an atmosphere that differs substantially from normal air in respect to CO 2 and O2  levels. Controlled atmosphere storage refers to  the constant monitoring and adjustment of the CO2  and O2  levels within gas tight stores or containers. The gas mixture will constantly change due to metabolic activity of the respiring fruits and vegetables in the store and leakage of gases through doors and walls. The gases are therefore measured  periodically  and  adjusted  to the  predetermined  level  by the introduction of fresh air or nitrogen or  passing the store atmosphere through a chemical to remove CO2.

There are different types of controlled atmosphere storage depending mainly on the method or degree of control of the gases. Some researchers prefer to use the termsstatic controlled atmosphere storage and flushed controlled atmosphere storage  to define  the two most commonly  used  systems.   Static  is  where  the  product  generates  the  atmosphere  and flushed is where the atmosphere is  supplied from a flowing gas stream, which purges the store continuously. Systems may be designed which utilize flushing initially to reduce the O2 content then either  injecting  CO2   or allowing  it to  build up through respiration,  and then maintenance of this atmosphere by ventilation and scrubbing.

    The main advantages of dehydrated onions are that they are easy to store, being lighter in weight and smaller in bulk than fresh or other processed onions, they are cheap to pack compared with canned goods, they do not require refrigerated storage as do frozen onions and the contents of a container can be used some time after opening provided they are not rehydrated. The newest dehydration process appears to be a variation on the air-drying process and is based on the principle of vapour pressure differentials, using air circulated around the onions at relatively low temperatures to ‘sweat’ the water from the food.  It is reported that this method of dehydration prevents a crust forming on the outside of the pieces of food and that the low temperatures have less effect on flavour, texture, colour and vitamin contents of onion than do the higher temperatures used in conventional hot air-drying methods.
